I'd be concerned that those seasoning cycles aren't actually polymerizing the
oil and you're just getting a layer of soot. How hot does your oven get, and have you tested that its own thermocouple gives an accurate temperature?

That's a good thought - IR temperature gun showed the pan was 500F for 3 hours per cycle

If you want to "reset" your cast iron you could put a steel disc brush on an angle grinder. After I cook with cast iron

Just sand it with 300 grit and then reseason. From then on clean it with chainma

I've seen videos of people sanding down their cast iron pans to a mirror finish and then re-seasoning them
