With the grill that hot, you're loading a lot of energy into the meat so the
carryover cook will be significant. You might want to pull it before and it will continue to cook off the grill.

What temp did you start your meat at? Should be room temp and not straight out of the fridge.

It was room temp. I think the wind issue may have played into it. Steaks in the back cooked faster.
