My trick is to use 3 peels (the big pizza spatula). Prepare the dough but ask your guests to build their own pizzas on a prepared peel. That way you can bake them quickly, one after the other, while rotating the peels back to the kitchen for preparation of the next pie. This way everyone gets their baked pie in the same 10-15 minutes. Of course, yours has to be the last one.
Ooni (and others) also sell these little storage shelf containers that allow you to pre-make multiple pies that you can (somehow) slide onto your peel. (If you haven't already noticed, it's really hard to slide a raw pizza dough, covered in sauce/cheese/etc, onto a peel for placement in the over).
