Puree some dried chili's (ancho, southwestern, etc) and add them to a quart of beef broth. Chop and fry 1lb thick cut bacon. Dice and Sautee an onion and red bell pepper in the bacon grease. Dice 4-6 Roma tomato, one can of corn, one can of beans and combine everything in a 10qt Dutch oven.
Rub a 3ish lb chuck roast in your favorite rub ( I use killer hogs ap) and smoke over the Dutch oven at 275 until the roast is 165. Cube the roast and add it to the chili.
