My prime rib is dry brined, I’m planning on putting a compound butter around the whole thing and smoking it, can I add
course black pepper onto it before I cover the thing in the butter mixture? Or just add pepper into the butter mixture?

I don’t think you’d want to do the butter before you smoke it. It’ll just melt off. The recipes I saw had you add it

The idea is that the butter melts over it and deposits the seasoning all around it, also I’m catching the smoked butter
