You should have time via Uber unless you get really really bad traffic.
We just did it in November from near the same area you will be.
Seems like it took about 40 minutes each way with a fair amount of traffic coming back into the city. This was on a Sunday morning.
With 3 hours I think you could plan on worst case an hour each way, with an hour at the visitors center, which is plenty.
