Although these strips were sold as "chuck country style beef spare ribs" — I'm
guessing its all of the leftover scraps from chuck roasts that they threw together on a few trays. They were only $5/lb.
Maybe a nice thick steak cut from a better part of the chuck will be better. I may have the butcher cut one for me and try that.
