Most locals really trash on Corpus. I love it. But I would skip it for this one.
The forecast does not look great and Texas beaches are not the warm escape you may be looking for this time of year. They can be sometimes but not looking good.

The entire Texas coast is going to be pretty cold, overcast and windy during that time frame. Even South Padre.

Spend your extra time in San Antonio and Austin. Natural bridge caverns, the missions, LBJ ranch (seriously so cool) , any number of hill country small towns and six flags. College station isnt far and seeing Kyle Field is truly amazing even from the outside. The Bush library is also out there and is a popular tourist stop. Havent stopped at that one myself but the W. library at SMU was really cool. LBJ library in Austin as well.

The Texas hill country is also full of unique wildlife encounters. Texas law allows a huge range of animals to be owned on private land. As a result there are some pretty unique and small time wildlife parks with all sorts of exotic animals. Think tiger king but most of them are a lot more responsible than that. Especially since that series aired.

If you are dead set on a beach, Corpus is great. Locals bash it but I am fond of it. The aircraft carrier there is cool and worth doing the tour. Go out to mustang island. Ignore the noise about Port Aransas. Its literally the same island, same beach just further down the coast with a higher concentration of high dollar overpriced rentals. Lively beach resort on Mustang island is the spot. No surrounding properties. Just protected sand dunes and state park with direct beach access. Grab some firewood and mallows at HEB and go have a beach fire.

South Padre is way the heck out there but would usually be the best beach spot. Given the weather I have to reiterate its probably not worth it unless you really want to see the spacex rockets. they are easily visible from the highway and you can actually drive very close to the assembly plant as long as launch operations aren't active.
