We had single digits to lower 30’s so this cook was a real test for my gravity feed masterbuilt 1050. Twice the coals got hung up in the hopper creating a void and causing the fire to go out or neatly out. The unit ran for 18 hours & burned through 30# of Royal oak lump charcoal. I also had hickory & mesquite wood chunks to mix in. It’s super annoying that I cannot get pecan or oak consistently where I live.
I did the foil boat method but covered the flat. It cooked 16 hours & rested 12. When I rested it I wrapped it in butcher paper with tallow.
This brisket had a very thin fat cap. That made it challenging to protect the flat. It was dry. The point was spectacular, the flavor turned out great. Here’s a photo of all that was left behind.
I also did two pork roasts. That was my back up plan if I had utter failure with the brisket. The pork turned out excellent - so easy to do pulled pork so challenging to get a brisket right.
