I brined mine in buttermilk this year
Came out more moist and tender than it ever has before. In the past I've always done a regular wet brine solution.

Yep 16 pound bird cooks a lot faster at 450. And the spatchcock cut down cooking

Ours were great too. Did whole turkey using Kinders brine kit & roasted in oven bag. Then smoked a breast. Both great.
