UCF tried that and it didn't work and Utah's offense is no better than UCF's. Remember, UCF is somewhere around the 3rd best rushing team in the country.
Utah's offense is just bad. Their OL is terrible, which is probably more the reason for their lack of success than their QB's. I think you could make the argument that their QB's have been bad BECAUSE of their bad OL. Wilson has the same problem as his brother and holds the ball too long, but Rising got injured because he got hit frequently and was trying to make plays with is legs when he had to scramble or was getting sacked. I wouldn't be that surprised (although I also won't predict) a shutout.
As for their Defense. KWhit is a good coach, especially on D. They might change things up and get a better result, but Houston's offense is one of the worst in the country and their D isn't great either. Utah lost to Houston on a last second field goal. BYU has a very strong and opportunistic offense and defense.
There are no guarantees, which is why they play the game, but BYU should win this game and it shouldn't really ever be in question. It is the rivalry so unexpected things can happen, but it is more likely that BYU wins by multiple scores than it is that BYU loses.
