My #1 recommendation is drive to Whistler. The sea to sky highway is absolutely gorgeous. Got to be one of the best drives in the world. If you want to know more, I can provide some other highlights about that drive.
Also check out the Howe Sound Crest Trail at Cypress Mountain. It's free to hike and not very far. The drive up to the ski resort provides great views across the entire Lower Mainland. The end of trail is an absolutely epic view across the entire Strait of Georgia and the Sunshine Coast.
Definitely do Stanley Park bike ride.

All the major shopping is on Robson or down in Burnaby at Metrotown
Grouse Grind is quite the grind climbing stairs up the side of a mountain.
Never did the Capilano bridge. I'm sure it's fun, but I'd also recommend the Lynn Canyon Suspension Bridge. You just have a pay a couple bucks to park instead of whatever Capilano is charging these days. Can also go along the trail and there are some nice swimming pools, though probably not warm enough to swim in October.
I like going to the Aberdeen Centre mall in Richmond (near the airport on Skytrain) or the Crystal Mall in Burnaby (near Metrotown). They're Asian malls. I like to hit up the food court and try new stuff that I can't even read the menu for (cash only btw).
