Big Noon Kickoff has been to non-FOX broadcast games exactly 2 times.
They almost always go to a FOX broadcasted game. The only 2 exceptions to that were both last year when they opted for the Colorado St @ Colorado game broadcast by ESPN (they were initially scheduled for Penn St @ Illinois that week but changed last minute), and then they broadcast from the USC @ Notre Dame game broadcast by NBC. The alternative FOX broadcast matchups the week of USC @ Notre Dame were Indiana @ Michigan (Indiana had a losing record) and Iowa @ Wisconsin (both 1-loss teams but both unranked). Arizona @ BYU on paper is better than either of those matchups.

Also, not only does Big Noon Kickoff generally go to a FOX broadcast game (90%+ of the time), they also generally go to whichever matchup is at Noon ET. There's generally only 2 or 3 times all season where they are not at the Noon ET FOX game location, so even if they don't opt for the Ohio St @ Oregon matchup there's still a pretty good chance they go to Rutgers or Iowa instead.

All that being said, there is a decent enough chance that they come to BYU that week (maybe 20% chance), but I'm not really expecting it.
