I don't know what "is the move" means but cheddar is better slightly cooler than room temperature, unless your room is
chilled into the 60s.
Also sharp cheddar is always better than medium cheddar.
And the Cabot brand extra sharp white cheddar beats the Tillamook extra sharp white cheddar every day of the week.
