two hours is sufficient as the European airports are getting very efficient;
with the only worry is if a bunch of flights land and go through at the same time.
We just had a very efficient experience at CDG (Paris), even though there is a lot of walking at CDG. Frankfurt is not as large so it should go better.
Amsterdam is also a very efficient airport, most times.
