Yelp recommends Bonsai Sushi
Looks like it's kind of a hole in the wall place in the strip mall across from the Provo Rec Center.
Saida Sushi and Noodle House is also recommended and is in downtown Provo on University Ave.
I don't really see anything in East Bay. I know Sam's Club sells sushi rolls.
