You got me curious now. So you cook unwrapped, and then when you get to temp
you pull it, wrap it and set it in the oven for that long to rest? I have very little experience with briskets but I've recently heard people say they don't wrap at all, except to rest. When I did a brisket I didn't wrap and it was great.
