I just did a brisket for the YM. Wrapped in butcher paper, like always.

It rested over 90 minutes. I always put the meat, still wrapped, in a small cooler and put a bath towel on top of it. Works like a charm. It was delicious.

I usually do parchment for less actives and foil for active members.

I like foil. It doesn't absorb moisture. To each his own.
