Wrapping brisket: foil or paper? Pros/cons of each?
Having missionaries over tonight with some new members and less active members. Want to serve a good meal. Just about to reach the wrap temp. Any thoughts one way or the other?

I usually do parchment for less actives and foil for active members.

I like foil. It doesn't absorb moisture. To each his own.
