There are some cultural differences on the rides. Haunted Mansion is Mystic Manor as "haunted" things in the Asian culture are taboo. The Jungle Cruise does not have comedic one-liners as they do not translate well into Cantonese and Mandarin. Obviously, the food is very unique and there are westernized and local options. One of the big draws at HKD, and the Tokyo Disney Parks, is the flavored popcorn offerings (Buffalo Wing, for example). The lines at the popcorn stands were always the longest of all snack lines.
One other unique thing that we found out was that they do not allow chewing gum in the park. I don't believe that it's written anywhere but if they see you chewing gum, they will ask you to spit it out. I'm assuming that this is related to park cleanliness.
Regarding the Pirates ride; for some reason I do not remember it specifically and the differences that it has from DL and WDW.
