dang. you gotta plan for having it done about 4 hours before you'll eat it. it
can sit in a cooler for that long just fine wrapped in foil.
that way you have some time for unforseen problems. like this. i've ran out of pellets before. nobody used to sell them, now you can get them almost everywhere, which is nice.
