Those places always seem incredibly high to me
I just got a full steer about a month ago. Here's how the cost broke down:

Steer was 1200 pounds (live weight), and paid $1.97 per pound to the rancher for the steer. Cost was $2,360.

Processed by my local meat locker plant. They charge $0.18 per pound (live weight) to slaughter ($132). Then they charge $0.75 per pound to process (based on hanging carcass weight), which includes cutting and packaging. Cost for processing was $365. On top of that was a $20 waste disposal fee.

Out the door I paid $2,877 for an entire steer. I got 487 pounds of meat. About half of that was hamburger. The other half was steak and roasts (and some ribs). My cost per pound was $5.90 per pound out the door.
