It isn’t really an NFL tradition, but rather a Detroit Lions tradition — they

started playing on Thanksgiving in 1934 (following the lead of previous Detroit NFL franchises, dating back to 1920) and have done so continually since then, interrupted only by a few years during WWII. And the Cowboys followed their lead starting in 1966.
