Go even further than spatchcocking… just remove the thigh/leg from the whole
Breast and grill. Remover the thigh legs when they reach 175 and remove the breast when it reaches 155. Then you don’t have to worry about breast overcooking and/or leg/thigh undercooking.

While your at it… remove the back/neck before cooking and boil to make stock for the gravy while the turkey is cooking.
