Unless you are consuming a ton of calories, gaining back 7-8 lbs in a week would be very hard. I wouldn't be surprised
if you started working out again for a few days and then see the weight on the scale be similar as before. A lot of factors play into what the scale says, you could be retaining more water, stool, etc. Get back on track and I think you'll be good. I've seen that happen before with my weight, like I'm up 5 pounds or more then a few days later or so I'm back to where I've been averaging.
