I think it is a false assumption that they are looking for loads of activities.
Both of my kids got in and neither really had activities to write about. They wrote about work, service, and how they wanted to use a BYU education to “go forth to serve.” BYU is looking to give a spiritual education to people as a step up in life who will return it to the world, not to create another Ivy League school. The more down to earth the essays can be that shows the student knows what they want to do, why BYU will help, and how they will pay it forward, so to speak, the better.
