My advice. Get out of Utah.
I've been working as an ME for 16 years. When I graduated BYU I took the attitude of, "I'll take a job where ever I can find it." I ended up going to the Bay area, and gained experience in the semi-conductor industry, medical devices, solar, and finally in EV charging. Go search on indeed, and you will find there are literally 10x as many ME job in the Bay as in Utah.

I just moved back to Utah this year and even though I took a pay cut, I am the top paid ME (non-manager) in the company, and according to my boss I am top paid by a lot. Considering the current economic climate, I don't think I make that much, so that tells me all my coworkers are underpaid.

If you stay in Utah, will not make as much money throughout your career as you would if you take some time and get out. Utah is pretty limited on opportunities, although the ME sector is growing. Anecdotally from my job hunting, I would say 50% of the ME jobs here are military related. Another 20 % is mining, oil and gas and 30% is everything else. Once you pick a lane it can be hard to change.

I got my first job from the BYU career center job board. A good place to start if you haven't looked already. I also recommend reaching out to LDS employment services. I'd be happy to look over your resume and give you interview tips if you want to DM me.
