But isn't there a rule that the offensive player no longer has to just sit still
in their stance and absorb an oncoming rush by a defensive player who has jumped offside?

For many years the rule was that the offensive player couldn't move before the snap, because until the defense contacted the offensive player, the defense could always get back onside before the ball was snapped. But I thought that recently the rule was changed that the offensive player can protect himself when the defense is moving.
