to pull the pork as you serve, rather than shred it all before. It stays juicier longer, tastes better, and presents better.

Worst case, shred it all right before serving, not 30 mins before or whatever.

foil first, then wrap in a towel, otherwise you get a greasy towel.

How are you resting? If you wrapped in foil, then towels and put that in a cooler, it can stay perfectly fine

Yup, I've wrapped it in towels and let it rest for 6 hours in a cooler
