If the Letter of the Law is the Old Testament, the scriptures are unclear on the sun-up vs sun-down start to the day.
(Or whether nighttime were even part of the Sabbath "day" — as the scriptures appear to have originally distinguished.) And modern scripture don't help on that, either. Jews wrangled over that one in antiquity.
You could say we're kinda left with the Spirit of the Law to establish the Letter of the Law on that one.
