My wife and I have found a couple nice places in Park City this time of year for a fraction of Summer/Winter prices.

BlooGeek Exceptional Grip Strength

The town is pretty quiet, but we hiked around and enjoyed the peaceful atmosphere. You can get an AirBnB stay in a really nice, upscale condo for hotel room prices.
