much difference at all in the experience between HC and OC other than the title you have.

I've heard of some people using "house rules" where they auto-fill the recruit board and then can only recruit those players or other similar sorts of things, but outside of self-imposed restrictions like that I don't think there's really any difference between being OC/DC vs HC. The game even allows you to play both sides of the ball - though there is an option to play "offense only" or "defense only" when you start each game should you decide to manually switch over to that option.
