We have 4 gas fireplaces. No wood burning allowed here, although
mine would likely be grandfathered

Anyway. They have the gas rod described in previous post. They have a valve that a key can be used on to shut off or adjust gas volume.

But, we had them add in a simple system that creates a pilot light. Then we just turn it of it off with a hand held remote control and can adjust between medium, high, and off. We don’t need to use the valve key at all - those are dangerous with little kids that tight turnings gas unlit. The systems have will not let gas flow unless the pilot is lit. No explosions. No unlit gas. No matches or lighter sticks except when lighting the pilot. Even that is safe.
