For this, I did a dry brine 1:1 salt/brown sugar.
If I'm ever doing a whole fillet to eat immediately, I don't do a brine because it takes a lot of the moisture out. I like to lightly coat in olive oil/lemon juice, magic salmon seasoning, and top with thinly sliced lemons. Always comes out great
