You're probably looking at replacing the following components:
-Struts
-Sway bar links
-Inner and outer tie rods
-Ball joints
For the struts, I'd go with the all-in-one assembly that includes the strut already mounted inside a new spring and strut mount. You won't have to deal with compressing the springs, and on a car of that age there's a good chance the springs are rusty/sagging.
For the inner tie rods, you may need to rent a removal tool from local auto parts store. The one I've used the past is like a really big deep socket.
For ball joints, it's probably best to just buy complete lower control arms with the ball joints already pressed in. (Quick search suggests that your car has ball joints that aren't mounted inside the LCAs, so maybe you can get away with just ball joints.)
Make sure you have some PB Blaster. And an impact wrench is wonderful.
*These are general comments for a typical FWD car, not sure what suspension setup your Jetta has.
