Pork shoulders are incredibly forgiving. So you can speed them up or slow them
Down by hours and they come out just fine

Id start before and just rest them in the oven at 150 till you’re ready to eat. You can cover but not wrap with foil to keep a little more moisture in but I usually don’t with pork.
