didn’t do it for you.
Maybe you’re ordering it wrong and asking For lean cuts instead of the good fatty stuff?

Tri-Tip is ruined nearly 100% of the time when it is smoked, IMO.

Not ruined if you smoke it to 115-120, reverse sear it until medium rare, and then top it with black pepper sauce.

A good rub tends to complement the beef flavor, while a bbq sauce tends to overpower it IMO.
