remove the underside membrane if you like to have it off (I don't bother but some people prefer it) then lightly spread yellow mustard over the entire rack of ribs. The. Apply your dry rub, I put it on pretty thick. Put the racks onto a cookie sheet and cover tightly with foil. Bake in the oven on 225 for approximately 4 hours. Heat up your grill (you can also use the broiler in the oven if you don't have a grill). Remove the ribs from the oven and when you take off the foil they'll look kind of grey, what you want to do is finish them on the grill. I like to apply a BBQ sauce at that point but some people like them dry. After applying the sauce put them on the grill to give them a char and to allow the sauce to set, takes about 5-10 minutes but you need to watch them the entire time to make sure they don't burn. The time on the grill is important as it finishes and tenderizes the ribs and gives them the smoked or BBQ finish that they need without having smoked them.
