I have a baking steel that works great in my oven (the 1/4" thick steel sheet is more heat efficient than a pizza stone) — but it's nearly the same size as my smoker grate. Consequently even though the smoker gets the steel rip-roaring hot, not enough heat gets around the steel and the top of the pizza doesn't cook fast enough.
I'd like to find something that I can set underneath the four corners of my baking steel to raise it up about 3/4" to 1 1/2" so more heat flows around the edges and gets up above the pizza and helps it cook from the top.
Some sort of metal disks would work. Or maybe something ceramic. Would love to find an existing commercial product that is relatively low cost that I could repurpose for this. Creative suggestions welcome.
