Easiest class you took at BYU? Mine was Math 302 - Survey of Geometry
I had an Econ major and a Stats minor. Econ was offered as either a BS as the default or a BA if you filled some extra requirements. My stats minor filled out most of the extra requirements to get the BA upgrade. My last semester I needed one more upper division math class. It didn't matter what it was so long as it was a 300 or 400 level math class and it was at least 3 hours.

I had no idea what the class was, but after spending 4 years doing pretty complicated calculus for econ and stats, I figured I could handle a geometry class. It turns out the class was designed for elementary ed students, and taught basic geometry principles on a level appropriate for a K-5 grade teacher. We actually sat in class for an entire week practicing bundling 10 sticks into a bundle, and then stacking 10 bundles together to make a brick of 100.

And there were students who struggled in the class.

EDIT: Went to look it up and it's now been renumbered to Math 362
