Fall break trip with a couple teens to Hong Kong and Seoul. Any tips?

Kids have been to Disney in US, France and Japan and want to conquer China, well Hong Kong at least. Any Disney tips for Hong Kong and anything else for both Hong Kong and Seoul South Korea in general? Lodging, public transit, dining, sites, currency exchange, anything else? TIA!

Go to the weekly horse races in Hong Kong. I loved Hong Kong when I visited in 2014.
