Turkey A spatchcocked and a. Smoked to 150 (I had to pull different pieces off
At different times). Turkey B cooked sous video for 18 hours, breast to 132 and thighs to 150, then smoked for an hour. Both resting for nearly an hour.

Both had same brine, same rub, and creole butter injected.

Which do you think will taste better? To be determined. I'm going with the sous vide turkey B.
