Do you get a vehicle checked out by a mechanic when you go to buy USED from former owner? Is that weird? Should the
owner be okay with letting you do so, or at least drive it to the shop of your choice?

Pretty normal process when buying a used car. If the seller doesn't want to do this, I'd walk away

As a seller I’d be happy to meet someone at a mechanic. But I wouldn’t let them drive away in my car to go to a mechanic
