Medical question - Endocrinologist needed
I have a daughter that was diagnosed with polycystic ovary syndrome as a teenager and was prescribed metformin by her gynocologist to treat it (metformin is usually used to treat type 2 diabetes). The treatment was successful and she has had no issues in years.

She is a sophomore in college and in the Air Force ROTC and is in the process of getting medically cleared so she can do air force field training next summer. The use of metformin was flagged and the Air Force needs her to see an endocrinologist (she cannot see any other type of doctor) to confirm that she is not diabetic. The USAF has been trying to find her a doctor for about 6 months, but has been unable to. Recently they told my daughter that she could find/pay for her own endocrinologists to confirm the diagnosis. She essentially just needs to see one who will presumably order some blood tests and confirm that she does not have diabetes and that she is not prediabetic.

So, my daughter is in the process of trying to find an endocrinologist in Salt Lake where she lives (and I am looking in Vegas where my wife and I live).

We have run into a few snags. First - there must be a severe lack of endocrinologists out there because almost all are not setting their next appointments in January or later (maybe that is normal along all practice areas). She needs to be cleared (or at least have all of the medical paperwork completed) by January 15. Second - the endocrinologists out there that we can get into will not see her because she is not diabetic. Several have said that they need another doctor to diagnose the diabetes and then they will treat it. It is not an insurance issue, because we have offered to pay in cash since it will essentially be a one-visit consult. We are in a bit of a catch-22 - she needs an endocrinologists to tell her she is not diabetic, but the endocrinologists won't see here because she is not diabetic.

In the vast sea of knowledge that is Cougarboard, is there anyone out there that knows of an endocrinologists in SLC or Vegas that might be able to do a quick consult before the end of the year to simply confirm that my daughter is not diabetic.
