I went and ate at an Ecuadorean restaurant in Provo over the weekend. I did
serve in Ecuador, so when I discovered the restaurant, I was very excited. I hadn't eaten Ecuadorean food in over 20 years, so I was interested to see if the food would be how I remembered it. It really was very similar to how I remember it and was very good.

It's called Como en Ecuador (or Like in Ecuador), and I say it delivers pretty well.

I had encebollado. Fish and onion soup that is one of those things that doesn't sound good when I say what it is, but it really is awesome. It's a missionary favorite. Or it was when I was there in 99-01 anyways. It tasted pretty close to what I remembered. I did like to add in the spicy pepper sauce with it while I was in Ecuador, but they didn't have it at the restaurant. It was okay without thought. I had some lime and chifle to add in.

My wife had arroz, menestra, and carne asada. That was my other favorite meal, and something we ate more often, because it took far less time to prepare. Anyway, it was also a hit. My wife was impressed with the menestra, which is kinda like maybe comparable to refried beans...but not really. It's in the same ballpark thought.

The restaurant is kinda not at a super prime location, so go find it. It's down near bicentennial park in Provo.
