I ate this lunch every day for a month:
Go to a store with a deli counter and buy a bunch of roasted turkey. Have them slice it thick, and cut it into small cubes.
Then go to Trader Joe's and buy a bunch Southwestern Chopped Salad Kits.
Add some turkey to the salads and blam-o: Easy and delicious.
